Banana Bread (version 12)


1/2 cup (1 stick) butter
1/2 cup sugar
1 egg
2 cups flour
1 tablespoon baking powder
1/2 teaspoon each: salt and nutmeg
2 large ripe bananas
1 teaspoon vanilla
1/2 cup raisins tossed with 1 teaspoon flour
1/2 cup coarsely chopped pecans


Cream the butter and sugar together until light and fluffy; beat in egg, mix thoroughly. In a separate bowl, sift together: flour, baking powder, salt and nutmeg. Mash the bananas and add them to creamed mixture -- alternating with the dry ingredients, beating after each addition until the batter is thoroughly blended. Add raisins and nuts, stir the batter well. Pour into a greased loaf pan (9x5x3) and bake at 350 (moderate) oven for approximately one hour.
