Applesauce-Oatmeal Muffins


1 cup Rolled Oats
1 cup Non-fat milk (was:buttermilk)
1 cup Wheat flour
1/2 cup Brown sugar
1/2 cup Applesauce (I used chunky)
2 Egg whites or eggsubstitute
1 teaspoon Baking powder
1/2 teaspoon Baking soda
1/2 teaspoon Salt (optional)


Soak oats in milk for 1 hour. Combine the rest of the ingredients, mix well, and bake at 400 degrees for 25 minutes in a muffin tin. Makes 12 medium-sized muffins
