Apple Pastries

400g pkt sweet short pastry
2 apples
1/4 cup chopped dried apricots
2 tsp brown sugar

Divide the apricot mixture between the 4 apple halves, filling the cavity. Place one apple half on each square. Gather up the pastry to enclose the apple leaving a small gap at the top, so you can see the apricots. Lightly beat the egg and brush over each pastry apple. Bake at 180 C 40 minutes, or until the apple is tender. Serve with Hot Apple Sauce.

SAUCE:- Heat the apple juice, brown sugar and cinnamon, stirring until sugar dissolves. Bring to the boil and simmer 5 minutes. Stir in the butter.
